RATATOUILLE

Yes, you did read the title correct. If you have ever seen the movie Ratatouille then it has probably been a dream of yours since you've seen it to make ratatouille. Well folks, I did it. I made ratatouille and it tastes fan-flipping-tastic.

Forgive me. I didn't get any pictures of the process. But here's the outcome. (:



Ratatouille

Servings: 4-6           Calories: It's healthy, I swear

Ingredients:

  • 1/2 Onion
  • 3 Garlic Cloves
  • 12 oz. Tomato Puree
  • 1/4 tsp. Oregano
  • 1/4 tsp. Red Pepper Flakes
  • 2 tbsp. Olive Oil
  • 1 Eggplant
  • 1 Zucchini
  • 1 Yellow Squash
  • 1 Red Bell Pepper
  • Fresh Thyme
  • Salt & Pepper
Directions:
Grab a large skillet & place on stovetop with medium heat. Add tomato puree, chopped onion, minced garlic cloves, oregano, red pepper flakes, & one tablespoon of olive oil. Stir the sauce for a couple of minutes. (You won't need to long because we'll be putting this in the oven in a bit to bake.
Next cut up eggplant, zucchini, & yellow squash into 1/16 slices. Overlap them around the pan starting from the outside until you reach the center. Season with salt, pepper, and thyme. Place in oven on 375 for 40-45 minutes.
